Spinach is a super food. It is loaded with tons of nutrients in a low-calorie package. Dark, leafy greens like spinach are important for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals.
Ingredients :
For the filling:
1 and ½ cups finely chopped spinach
1 tablespoon finely chopped ginger and garlic
Besan/Gram flour – 1 cup
½ teaspoon salt
2 green chilies, finely chopped
For the dough:
1 and ½ cups whole-wheat flour
1 teaspoon carom seeds
salt to taste
1 tablespoon oil
hot water as needed to make a soft dough
Preparation:
Wash spinach neatly and soak in salt water for 2-3 hours and then chop it finely.
Grind chillies, ginger, garlic and fennel seeds in mixer and make a fine paste.
Instructions :
To prepare the filling, bring a pan to medium heat and pour oil. Once the pan heats up add mustard seeds, fennel seeds, asafetida and ginger-garlic paste that we have prepared and stir it around.
Add finely chopped spinach to it and stir it around for a minute.
Add salt, chilly powder, garam masala, dhaniya powder and mix it well.
Allow it to cook till the water evaporates.
Add besan/gram floor, mix it well and let it cook for a while.
While the mixture cools down, prepare the dough
Now pinch a ball sized dough and roll about 4 inches in diameter.
Place a ball sized prepared stuffing in the centre.
Take the edge and start pleating bringing it to the centre.
Also join the pleats together and secure tight pinching off excess dough.
Sprinkle some wheat flour and roll slightly thick.
On a hot tawa place the rolled paratha and cook for a minute.
Furthermore, flip the paratha when the base is partly cooked (after a minute).
Also, brush oil / ghee and press slightly. flip again once or twice till both the sides are cooked properly.
Serve hot palak paratha with sauce, raita or pickle.
