Sweet Potato Pancakes

Mornings are not complete until a stack of pancakes has been placed down in front of us. These sweet potato pancakes are an amazing twist on the original that is perfect plus they are naturally sweetened!




Ingredients for the pancakes :

  • 2 cup sweet potato

  • 1.5 cup unsweetened plant-based milk e.g. oat milk

  • 4 teaspoons maple syrup + more for drizzling on top

  • 2 teaspoon canola oil + more for spraying the pan

  • 2 cup all-purpose flour

  • 3 teaspoons baking powder

  • 8 teaspoons dairy-free chocolate chips

Instructions:

1. Cut the sweet potato into cubes. Boil 1 cup of cubed sweet potato in water until soft (approx. 20 minutes).
2. In a bowl, mash the cubed sweet potato and add the plant-based milk, maple syrup, and canola oil. Give it a quick whisk.
3. Add the flour and baking powder to the wet ingredients. Whisk until incorporated. Fold in the chocolate chips. Let the batter sit for a few minutes.
4. Spray a flat pan or griddle with oil and heat it to medium to low heat. Add a small ladle of pancake batter*. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula.
5. Let it cook on the other side until done. Repeat for all the pancakes. You should be able to get 8 pancakes out of the batter.
6. Stack the pancakes ,top it off with walnuts and drizzle with maple syrup/honey or you can add whipped cream instead-Just what you like! Enjoy!!

NOTES:

If the batter spreads too much in the pan, whisk a bit more flour into the batter. If it doesn't spread enough, add a bit more plant-based milk.

They have oodles of it. Especially when you eat the skin. 1 medium sweet potato has 6 grams of dietary fiber.

Potassium:

A good alternative for those of you who can’t eat or don’t like bananas.

Vitamin C:

One cup of baked sweet potato 52% of your daily requirements. Move over oranges!


Beta-carotene:

Like carrots, sweet potatoes can be great for eye health.


Manganese:

43% of your daily value of manganese can be found in one cup of baked sweet potato. In fact, manganese is important for brain health.
